Ingredients

375 g  Tagliatelle pasta

2 Tbsp  Olive oil

1 kg  Raw prawns (peeled and deveined, leaving tails intact)

200 g  Snow peas (trimmed and halved)

3 cloves   Garlic (crushed)

4   Spring onions (thinly sliced)

1   Large red chilli, thinly sliced (optional)

120 g  Baby spinach

Instructions

Step 1

Cook the tagliatelle in a saucepan of boiling water following packet directions or until al dente. Drain well.

Meanwhile, heat the oil in a large frying pan over high heat. Add the prawns and cook, turning, for 3 - 4 minutes or until prawns curl and change colour. Add the snow peas and garlic and cook, stirring, for 2 - 3 minutes or until just tender. Add the chilli (optional), spring onions and spinach and cook, stirring, for 2 minutes or until spinach wilts.

Step 3

Add the tagliatelle to the pan. Toss until heated through. Season and divide among serving bowls.
