Cook the penne pasta according to packet instructions. Drain and set aside.
Meanwhile, mix together the tuna, cherry tomatoes, red onion and sweet corn in a large bowl and toss to mix.
Add the avocado and the cooked pasta to the bowl and mix.
To make the dressing, juice the lemon and whisk together with the olive oil. Season to taste with salt and pepper. Pour the dressing over the salad and stir in the coriander. To serve, spoon the salad into the lettuce leaves.
