Ingredients

6 rashers   Bacon, chopped into 3-cm pieces

2 c  Pasta rice

4   Eggs, lightly beaten

3   Chives, finely chopped

3 tsp  Soy sauce

2 tsp  Sesame oil

2 Tbsp  Hot sauce, for serving

Instructions

Step 1

Cook the pasta rice according to packet instructions. Meanwhile, in a large non-stick pan over medium heat, cook bacon until crispy. Drain the bacon but leave about 2 tablespoons of fat in the pan.

Add cooked pasta rice to the pan with bacon fat and fry over medium-high heat, stirring often to evenly coat in the bacon fat. When the pasta is beginning to crisp, push it to one half of the pan, then add the eggs. Scramble the eggs on the side of the pan, stirring with a wooden spatula. Combine pasta and eggs together once the eggs are almost cooked to your desired doneness.

Add chives, soy sauce, sesame oil and drained bacon bits to the pasta rice. Toss to distribute ingredients evenly, then turn off heat and adjust seasoning, if necessary.

Serve with a generous drizzle of hot sauce.
