Blend the tomatoes, onion and red pepper in a food processor until smooth. Add the tomato mixture to a large saucepan. Cook for 15 - 20 minutes on medium-high heat until the liquid has reduced by about half, and has thickened to look like a paste. Stir occasionally to prevent sauce from burning.
Once the sauce is reduced, add the chicken stock, oil, thyme, curry powder and chilli. Taste the sauce and season with salt, if necessary.
Add the spaghetti, pushing it down or breaking it to make sure it is covered with liquid. Cover and allow to cook for 5 minutes on low-medium heat. Stir, turn down the heat to low, and allow to cook for another 8 - 10 minutes or until the pasta is cooked. If it is not, add about 1/4 cup of water and continue to cook for another 5 minutes.
Place pasta on serving plates, top with basil and serve with fried chicken, if desired.
