Marmite and pancetta spaghetti

Ingredients

500 g  Spaghetti pasta

1 Tbsp  Olive oil

200 g  Pork pancetta, chopped

80 g  Butter

50 g  Cheddar cheese, grated

handful   Parmesan cheese

2 tsp  Marmite

1 pinch   Freshly ground black pepper

Instructions

Step 1

Bring a large pot of water to the boil and add the spaghetti. Meanwhile, heat the oil in a frying pan and cook the pancetta for 8 to 10 minutes until crispy.

Step 2

Once the pasta is cooked, drain, reserving a little pasta water. Tip the spaghetti back into the pot and add the pancetta with the fat from the pan, the butter, Marmite and the Cheddar cheese. Toss to coat the spaghetti in the sauce and add a bit of reserved cooking water, if necessary. Season with pepper. Taste and add more Marmite, if you like.

Sprinkle with Parmesan cheese and serve.
