Ingredients

350 g  Fusilli

2 tins   Shredded tuna in brine, drained

1   Large tomato, chopped

1/4 c  Kalamata olives, deseeded and coarsely chopped

1   Red onion, chopped

2 Tbsp  Parsley, chopped

1 Tbsp  Capers, chopped (optional)

2 tsp  Lemon juice

4 Tbsp  Olive oil

1/2 tsp  Salt

1 pinch   Freshly ground black pepper

1 c  Mozzarella cheese, grated

Instructions

Step 1

Cook fusilli in a large saucepan of boiling salted water for 8 - 12 minutes until al dente. Drain, reserving 1/4 cup of the cooking water.

Meanwhile, place drained tuna in a medium bowl. Stir with a fork to break up the largest chunks of tuna. Add the tomato, olives, red onion, parsley, caperslemon juice, olive oil, salt and pepper. Stir to combine.

Step 3

Add pasta to tuna mixture. Sprinkle with the mozzarella and stir until everything is well combined. If the pasta seems a little dry, add some of the reserved cooking water and some more olive oil.
