In a large pan, heat two tablespoons of oil over medium-high heat. Add the garlic and cook for a few minutes until fragrant (but not browned.)
Add the pancetta to the pan and cook until crisp, about 3 to 4 minutes. Stir in the frozen peas and pasta rice. Stir for 1 minute.
Add the beef broth. Reduce the heat to medium-low and simmer for about 10 minutes.
When pasta is cooked, drizzle with 1 tablespoon of olive oil and sprinkle with Parmesan. Serve hot.
