Roasted red pepper & parsley pesto with penne

Ingredients

400 g  Penne pasta

290 g  Roasted red pepper

handful   Parsley

75 g  Unsalted cashew nuts

1 clove   Garlic, roughly chopped

2 Tbsp  Olive oil

50 g  Parmesan cheese, grated

Instructions

Step 1

Cook the pasta according to packet instructions.

Step 2

Meanwhile, put the parsleycashew nutsgarlicroasted red pepper and olive oil in a small food processor or mini chopper, and whizz to a pesto consistency. Season and mix in the Parmesan.

Garlic, roughly chopped
Olive oil
Parmesan cheese, grated
Unsalted cashew nuts
Roasted red pepper
Step 3

Drain the pasta and return to the pan with the pesto. Stir and gently heat for 1 minute. Sprinkle with a little more chopped parsley and serve.
