Cook the pasta according to package instructions. Reserve 1 cup cooking water and drain. Return to the pot and toss with lemon zest, lemon juice, and chilli.
Heat the oven grill. On a large baking tray, toss the cherry tomatoes, shrimp, and anchovies with 1 tablespoon oil. Grill until tomatoes burst and shrimp are opaque throughout, 5 to 6 minutes. Transfer to the pasta pot (along with any pan juices).
Add the olives, parsley, Parmesan, and remaining tablespoon oil to the pot and toss to combine, adding some reserved cooking liquid if pasta seems dry.
